Three preparations of carrots: juice, preserve and pudding. Heating is essential to disrupt the thick plant cell wall, releasing the Phytosnutrients within the cells. Frying in ghee further enhances bioavailability by providing lipid, promoting the absorption of hydrophobic non-polar carotenoids.
