The nitrate–nitrite–NO pathway. Increasingly, research is demonstrating that dietary nitrates and nitrites serve as an endogenous reservoir for noncanonically produced NO, particularly in hypoxic conditions when NOS may be less functional or predisposed to being uncoupled.
