Profile of E. coli O157:H7 gfp-72ec recovery from bruised apple tissue following injection of the bacterium and prolonged incubation. Bruised tissues of Red Delicious (circles) and McIntosh (squares) cultivars were injected with bacteria, and total cell numbers extracted from the tissues were measured after incubation for various periods of time. Total cell numbers were not corrected for efficiency of extraction. Solid symbols, freshly picked (1 to 2 days) fruit; open symbols, fruit that had been stored at 4°C for 1 month prior to injection. Data points are the averages obtained from counting three plates, and error bars represent 1 standard deviation from the norm.
