Stability of diamine oxidase (DAO-1) in pure and modified simulated intestinal fluid (SIF). Food matrix SIF 1 contained 50 g bovine serum albumin (BSA)·L⁻¹ and 25 g sucrose·L⁻¹. Food matrix SIF 2 contained BSA and whey protein isolate (WPI), each at 25 g·L⁻¹ and 50 g sucrose·L⁻¹. Food matrix SIF 3 contained BSA, WPI, and sodium caseinate, each at 16.67 g·L⁻¹ and 50 g sucrose·L⁻¹. A total of 100% DAO-1 activity = 1.25 ± 0.15 nkat_Histamine·mL⁻¹.
