Dietary carbohydrate and the uptake of tryptophan by the brain. The mechanism proposed by Fernstrom and Wurtman (18) is outlined. The suggestion is that a high carbohydrate meal increases the uptake of tryptophan by the brain increasing the synthesis of serotonin and melatonin.
