Quantification of exopolysaccharides, proteins and water in the partially purified supernatant obtained from L. brevis SP48 fermentations on medium 3 with glucose as main carbon source. Data recorded from the characterization of powders obtained from two downstream processes of two different batch processes were used to calculate average values.
