Ethical statement: The Adventist Health Study – 2 (AHS-2) began in 2002 with the main goal of evaluating the influence of diet on cancer. The inclusion criteria were English proficiency and being 30 years or older. The questionnaire was approved by the Loma Linda University Institutional Review Board in 2001, and approval was renewed annually afterward. The AHS-2 followed the Belmont Report’s three principles of respect for persons, justice, and beneficence.
