Overview of chemical interactions between SO2, metallic ions, quinones and induced subsequent reactions. Ethanol is the main alcohol of wine that reacts to acetaldehyde. Peroxide resulting from the oxidation of ortho-quinones further contributes to formation of acetaldehyde. Ascorbic acid will act as antioxidant and re-stabilizer of catechol subunits until depletion.
